La Perla d’Italia

In Italian, our name means “The Pearl of Italy,” and that is how we think of it: an Italian pearl in the city of Dallas. We hope you’ll agree.

Water BuffaloesIndeed, we make true Italian Mozzarella di Bufala daily from our plant in Dallas. The process begins at Antonio Giugliano Farms, our grass-fed water buffalo farm in Agropoli-Paestum, Italy.  Next, the milk is processed into curd at our plant, La Perla del Mediterraneo.

Agropoli-PaestumThe curd is then shipped directly to our mozzarella plant in Dallas. We control 100 percent of the process, from the diets and treatment of our animals, to the milk, curd, and mozzarella production, ensuring the freshest quality product available.

It is a proprietary concept which, to our knowledge, no other company in the United States is able to replicate to produce such a high-value mozzarella product.

Oftentimes, traditionally imported Mozzarella di Bufala is a mixture of water buffalo and cow milk, or features a sour taste due to loss of freshness.  Not ours.

Spogli/BushIn fact, our cheese was selected by the US Ambassador, Ronald P. Spogli, for President George W. Bush’s visit to Italy. It is a milestone in our history of which we are very proud.

The water buffaloes from this particular region of Italy are prized by artisan cheese makers throughout the world for the exceptional qualities of their milk. Mozzarella di Bufala is immensely flavorful with a hint of tartness, is rich in butterfat and very satisfying; while nutritionally being significantly lower in cholesterol and lactose, while higher in protein, calcium, iron, phosphorous and vitamin A.

We produce and deliver our Mozzarella di Bufala daily from our plant in Dallas in order to maximize Pulling mozzarellafreshness, taste, and your customer’s dining experience.

In addition to our incredible Mozzarella di Bufala, we also produce an incomparable Burrata cheese daily from our Dallas plant. One taste, and we think you’ll agree there is nothing quite like these cheeses in the market today. mozzarellaMozzarella – Our Mozzarella di Bufala is a fresh, delicate, porcelain-white cheese produced with water buffalo curd from the Campania region of Italy, the countryside area around Naples.  The water buffaloes from this region are prized by artisan cheese makers throughout the world for the exceptional qualities of their milk. Mozzarella di Bufala is immensely flavorful with a hint of tartness, rich in butterfat and very satisfying while nutritional; significantly lower in cholesterol and lactose, while higher in protein, calcium, iron, phosphorous and vitamin A.

Burrata
Burrata
– Burrata is a casing of mozzarella which hold a cheese/cream mixture inside, much like a balloon. Typically, Burrata is eaten with a knife and fork by itself, or with bread or crackers. Our cheese artisans hand-craft Burrata from our fresh Mozzarella di Bufala to create this soft, flavorful indulgence.  If you have never before tasted Burrata, then it is time to come to La Perla to experience it first-hand. Provola


Provola
– Our Mozzarella di Bufala, enhanced with a deep, rich smoke flavor. Excellent melted on pizzas or flatbread, or simply eaten as-is, Provola is nearly as diverse as traditional mozzarella, and is often used in place of it by enterprising chefs and those seeking to try something a bit different.

 

Stracciatella
Stracciatella
– As we mentioned above, this is the creamy filling for our Burrata. But in itself, Stracciatella is an amazing addition to many traditional dishes. Creative chefs have found many, many different applications for Stracciatella, such as a topping for risotto and pasta dishes; a spread for artisan breads which can be enjoyed by itself or by mixing in other flavors, such as pesto or alfredo; or as a fantastic dip for foccacia and breadsticks.

 

Scamorza
Scamorza 
– Scamorza is an incredible dry-aged mozzarella with an over-the-top flavor and richness that simply must be tasted to be understood. The aging process gives this wonderful cheese a “bite” that will ignite your taste buds and really allow you to experience the true flavor of Mozzarella di Bufala.

*NEW!* Fiocchi di Neve Italian Buffalo Pizza Cheese – If you have been looking for low-cost 100% buffalo mozzarella for your pizzas, this is it!! Meaning “snowflakes” in Italian, this cheese is designed so you may simply pull the Fiocchi di Neve out of the brine water, dry to your liking, and pile it onto your pizzas! The result is a beautiful , authentic Italian pizza (see below for example), the flavor is perfect, and this product is ideal for pizza making. And for even more control, order it dry! Then you can make your own brine for soaking it in as much or as little salt as you prefer!
